Once you have got this amazing crispy and crunchy chicken cutlets recipe under your belt , there is no more to reaching out for breadcrumbs to make them. Yes you heard me right! These are cornflakes chicken cutlets. Delicious, crunchy from outside & tender and juicy from inside.

This is perfect to feed your girlfriends after work over a bottle of rose and gossips or make it for your family as a lovely Sunday lunch.
Let’s get started: (making for 2 people)
- 2 Breast fillets
- 2-3 tbs of good dijon mustard
- 2 cloves of Garlic minced or grated (I love the smell of garlic, you can use 1 also)
- 1 teaspoon ground cumin
- 1 egg
- 1 teaspoon paprika
- Sunflower oil
In a shallow dish, add the dijon mustard, egg, minced garlic, ground cumin. Whisk them all together nicely.
Bashing the chicken in a cling wrap is like a de-stressing therapy for me or if your day hasn’t gone well, this is something you should try to make yourself happy that when nothing is promising at the end of the day, you at least know that bashing them up will give you a fantastic dinner 🙂
Put the fillets in and let them soak in the mixture.
Meanwhile coarsely crush the cornflakes with your hands (do not turn them into dust otherwise the crunch factor will not be there). Add the paprika to it for some kick!
Now ,dress up the chicken with the crunchy coating of cornflakes and leave them on a wire rack or a tray to dry.
Heat oil in a pan, go for a big sized pan where you can put both the fillets together. Fry for 2-3 mins on one side and repeat the same for the other side. (depending on the chicken, if you feel 2-3 mins is less and the chicken is not cooked, check it with piercing a fork if the juices run clear) do not over cook the chicken, you don’t want to have burnt cornflakes on your plate.
You can go for whatever salad your heart desires. Here I have chosen all my favourites to go with the crunchy cornflakes chicken cutlets.
- Rocket Leaves
- Cherry Tomatoes
- Red onions
For the dressing:
Good extra virgin oil, dijon mustard, spritz of lemon and pour it over your green bed of rocket.
