One of my favourite meals of the day got to be breakfast! I love breakfast, I am not that type who can survive on a granola bar or cup of green tea. I have to have my breakfast proper and I don’t compromise with it. What I compromise is the time as I always have a race against time, I look out for meal recipes which are easy & quick.
Here comes my easy oatmeal pancakes with blueberry sauce. They are flourless, extremely delicious and simple to prepare for your breakfast.
The blueberry sauce is optional, if you don’t have time or just like your pancakes with simple maple syrup and strawberries, perfectly fine by me.
For Making the pancakes:
- 2 1/2 cups Oats ( In a blender blend the oats until they have a flour like consistency)
- 1 tsp cinnamon powder
- 2 tsp baking powder
- 2 cups of almond milk (or any milk of your choice)
- 2 eggs
- A pinch of salt
In a bowl add all the ingredients- oats, eggs, milk, salt, cinnamon powder, baking powder and mix with a spoon. Let the mixture sit for a while for 5-8 mins so the consistency thickens.
On a low -medium flame, place a pan and let it warm
Grease the pan with butter or oil (as per your choice) and ladle the batter on the pan and cook for 2-3 mins on each side till golden.
Serve your pancakes with blueberry sauce, almond butter, fresh cream or maple syrup, whatever your heart desires. I have used blueberry sauce on this occasion.
- Fresh blueberries
- Good quality maple syrup
In a saucepan, heat 1 cup of maple syrup. When the syrup bubbles add the blueberries. Squeeze/ press some of the blueberries so that it can come to a sauce like consistency. When it starts thickening a little bit, turn off the heat and leave it to cool.
This simple and easy oatmeal pancakes with blueberry sauce will make you happy and realise that you should never compromise your breakfast because time is short!
